客家粿皮 Hakka Rice Dough

材料 Ingredients
糯米粉 Glutinous rice flour 2-1/2 杯 cup
粘米粉 (再來米粉) Rice flour 1/2 杯 cup
水 water1 杯 cup
糖 Sugar2 大匙 Tbs
食用油 Cooking oil 2-1/2 大匙 Tbs

註:喜歡更Q口感的話,增加糯米粉,減少粘米粉。這兩者加起來是三杯就可以。
Note: To make the dough more elastic, increase the rice glutinous flour and decrease the rice flour as long as the volume of both is 3 cups.

做法
1.將糯米粉,粘米粉,水和糖放進攪拌缸。攪拌機裝上槳型腳,用速度2攪拌水和粉充分混合,大約3分鐘。
2.小鍋裝水燒開。取1/10的粉團,捏成2塊小圓餅後放進滾水煮到浮
上來,此為粿粹。
3.將粿粹放回攪拌缸。換上勾裝腳,加入2-1/2大匙油後用速度4与原先的粉團攪拌直到光滑無顆粒,大約10分鐘。
4.取出粉糰後在工作檯上用手稍微搓揉整成圓型後再用保潔膜包住保濕。



PROCEDURE
1.Place the glutinous rice flour, rice flour, water and sugar in the mixing bowl. Install the flat beater to the mixer and run the machine over speed 2 until the flour and the water are fully combined, approx. 3 minutes
2.Bring a small pot of water to a boil. Take 1/10 of the dough and press it into two small round disks. Place the disks into the boiling water and cook until floating above the water.
3.Transfer the cooked dough disks back the mixing bowl. Install a dough hook to the mixer. Add 2-1/2 tbs. of oil and knead the dough over speed 4 until dough is smooth, approx. 10 minutes.
4.Transfer the dough to a working space. Knead the dough with your hands and form it to a ball. Cover it with a piece of plastic wrap.

紅色粿皮 Red Rice Dough

材料 Ingredients
糯米粉 Glutinous rice flour 1/2+2 杯 cup
粘米粉 (再來米粉) Rice flour 1/2 杯 cup
水 water1 杯 cup
食用紅色色素 Red food coloring 1 小匙 tsp
糖 Sugar2 大匙 Tbs
食用油 Cooking oil 2-1/2 大匙 Tbs

註:紅色色素可以用甜菜根泥或火龍果泥替代。
Note: The red food coloring can be substituted with beet puree or dragon fruit puree.


做法
1.將水和紅色色素拌在一起調勻。
2.小鍋裝水燒開。1/2杯糯米粉用適當份量的紅水攪拌揉成糰,然後捏成2塊小圓餅後放進滾水煮到浮上來,此為粿粹。
3.將剩餘糯米粉,粘米粉,糖,油和粿粹放進攪拌缸。裝上勾裝腳,速度轉到2,然後慢慢加入紅水攪拌直到光滑無顆粒。也可以直接用手揉。
4.取出粉糰後在工作檯上用手稍微搓揉整成圓型後再用保潔膜包住保濕。

2.Bring a small pot of water to a boil. Mix ½ cup of glutinous rice flour with proper amount of the red water and knead until smooth. Press the dough into two small round disks. Place them into the boiling water and cook until floating above the water.
3.Place the remaining glutinous rice flour, rice flour, sugar, oil and the cooked dough in a mixing bowl. Install a dough hook to the mixer and turn the speed to 2. Gradually add the red water into the bowl and knead until the dough is smooth. You can knead the dough by hands.
4.Transfer the dough to a working space. Knead the dough with your hands and form it to a ball. Cover it with a piece of plastic wrap.
